Meatless Monday! Super simple dish!! All you need: -pasta -shallot -zucchini -broccoli -cauliflower -vine tomatoes -asparagus -salt and pepper -vegan herb butter -olive oil . . You can make this vegan or vegetarian, but guess what?! There’s absolutely no meat here!! . . Boil pasta and cook to Al dente. In a large pan sauté zucchini to get golden brown in some olive oil. Add the shallot. Make sure to not let it burn!! Remove and put into a dish. Add broccoli and cauliflower and continue to sauté. Depending on how you like your veggies: soft or crunchy. Add a 1/4-1/2 of water with high heat and let it simmer in the pan. Helps to cook the veggies. Pull those out. Add the asparagus and do a quick sauté, I like mine crunchy which is why I do it separately. Lastly, pull those out and add the vine ripe tomatoes and sauté quickly. . . . Strain your pasta but save a 1/2 cup of the starch water. Toss the pasta with the tomatoes. Add your garlic herb butter (vegan or vegetarian). Add the water and let simmer. . . . Serve hot! Place your pasta on a dish and then stack with your veggies! Meatless Monday Chronicles!

I’mmmmm baaacckk!!! Guess what that means?! More fun recipes. Yes, I know my last food post was about salads, but it only seems fitting that my first post of the year, be about salads. We are all eating better for different reasons: to lose weight, to just eat healthy, for blood pressure, heartburn and any other reason.

I have had to continue to inspire myself and come up with more innovative ways to eat plant based. IT is not easy. I am going on 3 solid months of no meat consumption. I must say, how proud I am of my self.

Check out my lunch I made at work today. Yes, I made this whole salad. with all the components.

 

Anything can be an amazing in salads, you just have to get creative! I made this all at work. I took a whole avocado and cut it, strawberries, cut cucumbers, carrots, walnuts, dried cranberries, avocado, and spinach. It seems so simple, but this is so delicious.
