Meatless Monday! Super simple dish!! All you need: -pasta -shallot -zucchini -broccoli -cauliflower -vine tomatoes -asparagus -salt and pepper -vegan herb butter -olive oil . . You can make this vegan or vegetarian, but guess what?! There’s absolutely no meat here!! . . Boil pasta and cook to Al dente. In a large pan sauté zucchini to get golden brown in some olive oil. Add the shallot. Make sure to not let it burn!! Remove and put into a dish. Add broccoli and cauliflower and continue to sauté. Depending on how you like your veggies: soft or crunchy. Add a 1/4-1/2 of water with high heat and let it simmer in the pan. Helps to cook the veggies. Pull those out. Add the asparagus and do a quick sauté, I like mine crunchy which is why I do it separately. Lastly, pull those out and add the vine ripe tomatoes and sauté quickly. . . . Strain your pasta but save a 1/2 cup of the starch water. Toss the pasta with the tomatoes. Add your garlic herb butter (vegan or vegetarian). Add the water and let simmer. . . . Serve hot! Place your pasta on a dish and then stack with your veggies! World Wildlife Day 2019

I’m a day late, but yesterday, March 3rd was World Wildlife Day. The United Nations decides to proclaim March 3rd, which is also the day of the convention on International Trade in Endangered Species or Wild  Fauna and Flora. The purpose of World Wildlife Day is to raise awareness of the words beautiful species both plant and animal life. All life is precious. Our world relies on intricate ecosystem that support each other’s existence. It is the ever changing nature and balance between these ecosystems that we see life and purity. Keeping the “wild” protected is safer for the animals, but also for humans. Remove humans from the wilderness and most forms of life will thrive. This years theme is “Life below water: for people and planet”.
